Bhindi masala

500 gms okra
100 gms chopped onions
100gms chopped tomato
1tsp green chillies chopped
200gms onions gravy/paste
salt to taste
1/2 tsp each coriander powder,cumin powder,red chilli powder
2tsp chopped coriander
50gm curd

Method
  • cut okra into slices and deep fry
  • heat oil in frying pan,add in onion,garlic,green chillies,tomatoes and saute till golden brown.
  • add onion gravy in it.
  • add fried okra to it and mix well.
  • add all seasoning
  • finally add curd and cool till well done.
  • pour in a serving bowl and garnish with coriander leaves.

Aloo Bhindi

I tried this recipe long ago I'm just editing it to follow the rest of my newer posts.Potato is one versatile vegetable like all of you know.Its tastes well with almost every vegetable.And whenever we need to give a different twist to the same old veggies aloo is the answer!




You would need


Bhindi/okra/lady finger- chopped into 1 inch pieces - 250 gms
Potato - 1 cubed
cumin seeds - 1 tsp
Chilli powder - 1tsp
Turmeric powder - 1/4 tsp
Oil - 3-4 tbspns
Salt as required

Procedure
  • Add oil in a saucepan,add the cumin seeds and let them pop.
  • Now add the potatoes and let them fry, next add the add the okra to this,allow to fry.
  • Add chilli powder, turmeric,salt and stir well.
  • Cover and cook until the potatoes and okra are done.This dish needs more oil or else the bhindi will get all slimy.
  • Serve with hot chapatis.

Capsicum Chicken Pasta

You need:
Pasta - 2.5 cups
Chicken boneless pieces chopped into small pieces about a cup
oil/Butter - 2 tbsp
Bay leaf - 1
Capsicum - 1small diced
Tomato - 2 medium chopped finely
Onion - 2 medium chopped finely
Garlic pods - 7-8 finely chopped
Coriander leaves - 1 cupful
Garam masala - 1tbsp
Coriander powder - 1tbsp
Pepper corns - crushed coursely 1 tsp
Tomato sauce , Soya sauce - 2 tbsp each
Cheese- any will do.- about 2 cubes.
Salt as reqd


Procedure :

  • Put pasta in cooker, water level to submerge the pasta.Add salt half a tspn and also 1 tspn oil.(this keeps the pasta from getting all sticky), about 4-5 whistles will be needed to soften the pasta.
  • In a nonstick vessel, add 2 tbsp oil and to this add chopped garlic, then add bayleaf once the garlic turns brown.
  • Now add onions chopped,tomatoes chopped and pieces of chicken.Cover this and cook until chicken turns soft.
  • Add soya and tomato sauces, masala powders, salt, pepper.Stir well to mix the masalas well.
  • Add some water and cover to cook.
  • Add the cooked pasta, cheese, capsicum. Cook till capsicum cooks.
  • garnish with coriander leaves.
