Who doesn't like icecreams? And if it has mango then we double like it!This year for school summer holidays we went to Dubai visiting my parents.My sister joined us too.The kids and us had a lovely time.We were on a mega eating spree all month long.Kids and us elders couldn't have more and more of icecream we had baskin robins which is truly amazing.But when i saw the freezer section of the supermarkets i wanted to just live there.Why?fresh dairy cream stacked from top to bottom!!

Mango Froyo - frozen yogurt
Its mango season and its summer season too.This season unlike last year we had a lot of freshly plucked mangoes and so lesser tension eating them not having to think about the chemicals or pesticides.My kids love ice cream and in the greedy intention of making my son have some form of milk i tried this recipe which was yummy but he ran away seeing it.

Aam ka panna/Raw mango spiced juice
I have been on a long vacation this year because my daughter's new school has a longer leave than the previous one.I had so many pictures saved in drafts but couldn't post it because of the IE ditching me.This drink i made a few months back when I had green mangoes from an aunt's place to pickle.With the shifting and moving in i couldn't pickle them and few were turning ripe.So i decided to make this aam pana with i wanted to make for so long.
My kids loved it and wanted it from the remaining mangoes too.

Fruit Verrines
I love desserts in a cup now even though i end up losing my cup most of the times but more than eating it i love to make it!I enjoy the colors and layers that show through the glasses.You can get as creative as you can with these.I intended to make a black forest pudding but this is what i ended up with.The result was great :)
Everyone seems to be enjoying these multi colored desserts more than the ones that are more humbler which makes me want to try more of such desserts :) Check out my others Tiramisu and Custard jelly in a cup.
Preparation time : 20 minutes plus cooling time
To make this you need
Fruits - strawberry,mango
I used dried strawberries feel free to use fresh ones
Layer one
Chocolate cake 4-5 slices
Layer two
Mango cubes of one medium sized mango
Layer three
Strawberry flavoured yogurt few tablespoons
To top with Peanut candy 4-5 pieces
- Soak the dried strawberries in some water so the water will get a nice strawberry flavour.If using fresh berries cook them with sugar and water for a few minutes then strain the fruit and liquid.
To make flavoured yogurt,you need - Hung curd 4 tablespoons
Add 1 tsp of sugar add the cooked berries and blitz in a blender.Mix this to the hung curd to get flavoured yogurt.
- To assemble the verrines, add the chocolate cake to the bottom add a few tsps of the fruit flavoured liquid we had strained.
- Add mango cubes above this.
- Add the flavoured yogurt on top of this.
- Repeat these three layers to fill the glass to the top.
- Garnish the tops with peanut candy bits.
Notes :
- I used ready made chocolate cake and peanut candy.
- To make hung curd, use a thin cloth over a strainer and pour some curd onto the cloth, the whey will separate from the milk solids.Leave this for a few hours.Then beat the thick milk solids well with a whisk or fork to make it creamy.

Mango pannacotta with jaggery glazed nuts
The Mango season is almost over and I have to post atleast one recipe else I wouldn't bedoing any justice to the King of the Fruits.
You need
Mango pulp of 2 mangoes
Milk (boiled and cooled) 2 cups
Condensed milk 4 tablespoons
Water 1 cup
Gelatin 5 gms/1 sachet
For the jaggery glazed nuts see here .
- Peel and chop mangoes and grind in a blender with some milk.
- Mix the pulp with the remaining milk, add the condensed milk to this and stir well.
- Heat water until hot (not boiling) add the gelatin and mix well.
- Strain the water + gelatin mix and our along with mango + milk mixture.
- Pour into desired moulds or serving bowls and refrigerate until done.
- Garnish with few pieces of mango or glazed nuts.
Creamy mango pannacotta is ready : ) Enjoy!

Mango Kulfi
Last week we had some refreshingly cool rains and I was so tempted to make kulfis which have been on my to-do list for a while now.Just in time, I had half a dozen ripe Alfonso mangoes - all the more reasons to make kulfis now :)
Its such a delight to sleep late on rainy days and especially in a sweltering hot place like Chennai.I really miss the monsoons in Mumbai and how the hill tops would turn lush green in the showers...The rains had the same effect to the trees outside my kitchen and i just couldn't resist clicking them along with my kulfis.I woke up dreaming how to click my kulfis :) now you know i'm addicted to my blog!
Did i tell you we all enjoyed the kulfis while it was pouring on a saturday afternoon....how does that sound now.....great isn't it!These kulfis brought back a lot of memories from my childhood days when my dad used to bring various flavours of kulfis home....date,chickoo,mango,...yummy!
I was surprised at how easy these are to make, even when I read the recipe i was a little hesitant to try it out because i was wondering if i'd get the right consistency of milk and bla bla...But seriously you needn't bother its the easiest recipe ever and definitely a keeper!

Milk powder 1/4 cup
Condensed milk 1/2 cup
Sugar 1/4 cup
Mango pulp 1 cup

- In a heavy bottomed pan, heat milk, to it add the milk powder,sugar and condensed milk.Mix well and keep stirring until this reduces (i simmered it for about 15-20 mins)
- Let this milk mixture cool down and then mix the mango pulp.
- Pour into kulfi moulds and stick an ice cream stick into each mould.
- Freeze the kulfis over night.
- How to serve: dip each mould in some regular tap water and the kulfis will slide out of the moulds.Serve them as it is or enjoy with nuts.
Tips:
- Leave the stove unattended at your own risk, this mixture will definitely boil over even if you leave a spoon in it.I lost about one kulfi's mix because i went to sit for 5 mins.
- The sugar and condensed milk make the kulfi a bit too sweet so you can adjust according to your taste or have it as it is.
- I used the pulp of 4 really ripe Alfonso mangoes and i didn't strain it and we enjoyed some mango chunks in the kulfis.
- Use any steel tumblers to set the kulfis i did just that.
