I've been wanting to  make pizza for ages ofcourse from scratch. But somehow things never work out.Either i have no veggies for toppings or no cheese. So this time i just decided i should go and make something with a pizza base.I made the pizza sauce the day before. Also the idea was to make pizza pinwheels but what happened was not very nice to look at but tasted really yummy and my kids loved it.

Bored of your daily breakfast - eggs and bread?Try this version of the humble breakfast!

My mom used to make this often especially when we have leftover stock of bread. You can call it a remake- recipe.I simply love it and so will little kids.Especially if my mom makes it for me i can have it everyday :) Such a bliss to have someone make breakfast and tea for you!

You can make this with or without eggs (for those who want a vegetarian version) but eggs make a huge difference to this recipe.

You need

Bread 5-6 sliced chopped into small squares / as much as needed
Eggs 2
Onions 1 large sliced finely
Tomatoes 2 large chopped finely
Curry leaves 2 sprigs
Oil 1 tablespoon
Mustard seeds 1 tsp

Garam masala powder 1 tsp
Salt to taste
Coriander leaves/cilantro a few sprigs chopped finely

  • Heat oil in a large pan/vessel, add the mustard seeds let them pop.Add curry leaves, followed by onions let it fry well.
  • Once the onions are nice and soft add the tomatoes and let it cook well and get mashed.Add a little salt to speed up this step.
  • Add chilli powder, garam masala and fry well.
  • Now add the eggs and mix well so they get scrambled.

  • Next add the chopped bread and mix well.Check for salt.

  • Sprinkle chopped coriander leaves and serve hot with a mug of coffee!

Super soft Butter milk pancakes

Have you woken up on a Saturday itching your head about what to make for breakfast??This saturday morning i woke up exactly like that. And I thought let me make some pancakes. Now my LM won't even touch pancakes but even she had these with what turns out to be her favourite topping...take a wild guess??...condensed milk!!!

I used to be always fascinated by none other than Nigella Lawson making these little beauties on tv.At one time i was so obsessed with these I used to make them every weekend. Then i got a little too conscious about all the flour its got.But its a good breakfast for kids. These should be good enough with whole wheat flour but this time i stuck to all purpose flour.

Any fresh fruit crush or jam should taste beautiful with these fluffy pancakes.I had black currant jam in hand and DH enjoyed it with some honey, butter, jam and the winner for both dad and daughter was condensed milk!

Preparation time: 30 minutes (including cooking time)

You need

All purpose flour 1 cup
Cold Milk 1 cup + lemon juice from a wedge of small lemon
Egg 1 large
Curd 2 tsp
Pinch of salt
Baking powder 1/4 tsp
Baking soda 1/4 tsp
Sugar 2-3 tsp
Vanilla essence 1 and half tsp
Vegetable oil/butter 2-3 tsp

  •  Whisk an egg in a wide mouthed bowl, until pale yellow.Add milk and lime mixture with curd and mix well.
  • Add the oil and vanilla essence and mix well.
  • Now add the flour, salt, sugar, baking powder and soda and mix all until well combined.
  • Heat the pan/griddle and pour ladle-fulls of the mix, when tiny bubbles appear on the edges/throughout the top of the pancake, its ready to be flipped over.
  • Repeat until you finish off all the batter.

almost gone!

  • Serve the pancakes hot with any favourite toppings of your choice - jam, honey, butter, chocolate sauce or even condensed milk and don't forget to grab your hot cup of coffee to go along!
Tips :
  • All purpose flour can very well be replaced with whole wheat flour, check out my whole wheat flour pancakes here.
  • If you're planning to use some super sweet topping like condensed milk or even honey you can reduce or totally cut down on the sugar in the pancake mix.

Baby Pizzas - perfect treat for the kiddies

My first MM after my vacation:) I always look forward to MM, getting to know what the magic ingredients are and thinking what to make is really a fun idea.I loved the fun ingredients this month - flour and coriander(leaves/seeds).I have been watching quite a few pizza making shows on tv recently that i definitely knew i was making some bread for the MM but when i looked at my LM i thought it has to be pizzas!A wonderful treat for the kiddies!

This is my first time at making pizzas from scratch which is why i thought making a mini-pizza would be a good idea.It was a hit with my family.Beautiful bite sized pizzas. The potatoes had a beautiful roasted flavour with the garlic cilantro drizzle adding a touch of intense flavors!

I used to think making pizzas was way too tedious and time consuming until i watched on tv, how easy traditional pizza making is.The Italians make pizzas like our chapatis on a daily basis with healthy toppings and not always is cheese included (surprised! me too)

This is such a quick and easy snack and as i just got back from my holidays the fridge is yet to be stocked completely. So i decided to go easy on the toppings: potatoes and garlic cilantro sauce.

You need
for the base:
All purpose flour/maida 2 and half cups
Yeast 1 tblspn
Sugar 1 tablespoon
Salt 1 tsp
Oil 2 tablespoons
Warm water about 1 cup

- Mix all the above ingredients and knead well to make a nice soft dough. When you poke the dough it should bounce back when you've reached that stage grease the dough ball and place it in a well greased bowl.
- Cover the bowl and allow the dough to double in size. This should take about a few hours

For the topping
Tomato sauce 2-3 tablespoons
Boiled potato 1 medium sized sliced into discs

To drizzle : grind to a course paste

Chilli sauce 1 tsp
Garlic pods 2
Cilantro/coriander leaves a few sprigs
salt to taste
Oil 2 tablespoons

  • Once the dough is ready, make small balls out of them and roll them out with your hand not too thin and not too thick.place the spread pizza bases on a greased tray.
  • Spread a generous amount of tomato sauce, place a few potato discs and pour a few spoons of the cilantro garlic paste on top.
  • Sprinkle some oil around the sides of each pizza and let this rest for an hour.
  • Preheat the oven to 220C and push the greased tray with pizzas into the oven and bake for about 20 mins.Until the base is done.
  • Yummy baby pizzas are ready to enjoy with some cool lemonade!

Naan - on tawa

I'm back after a wonderful relaxing vacation!I was definitely missing home and my ever so favourite blog.I really didn't think i'd be able to keep away from it for so long. This Naan on tawa recipe is so easy and turned out pretty good after i had a few not too good experiences with naan. And I had given up on making naan at home until i tried this version!

My earliest memories of dining out are usually always my favourite naan and butter chicken followed by some dessert.Recently the naan passion has moved on to kerala parottas- i have been trying this at home and will definitely share a step by step soon i hope :)

You have to use yeast in this recipe and I agree it would have turned out even better in a grill or oven but I just wanted to try the tawa version which is much easier than using the oven/grill.The secret here lies in covering the naan and cooking it on the griddle/tawa on both sides which puffs up the naan beautifully.

I read two versions here  and here before trying this myself.

You need

All purpose flour/maida 2 and half cups
Yeast 1 tablespoon
Salt 1 tsp
Sugar 1 tbsp
Warm Water 1 cup and more
Oil 1 tbsp

  • Place the yeast with sugar and salt in a bowl and pour some warm water and stir well.Leave it undisturbed ( this is a really difficult step if you're rather inquisitive like me i kept peeking in and luckily the yeast didn't ditch me).If the yeast is in good condition(yes i had a few bad/dead yeast too) it will froth up in about 10 minutes or so.
  • In a mixing bowl, add the flour and pour the yeast into this and enough warm water and knead into a nice soft dough.
  • Add oil and knead some more until the dough pops back when poked. Now grease the dough and leave it covered in a greased bowl.
  • The dough will increase in size in about an hour's time.
  • Now pinch off balls of dough and roll them out into any shape you fancy.Roll them out a little thick not too thin only then will the naans be soft.
  • Heat a tawa/griddle and drop the naan onto this, once it puffs up on one side flip it over and cover the naan and cook the other side until brown spots appear on both sides.
  • Repeat for all the remaining dough.

  • Grease butter/ghee on the naan and serve hot with any spicy vegetarian gravy or non vegetarian gravy!

Like you all may already know french toasts can be served both sweet and savory. This is a slightly pepped up version for you people who love your morning bread and eggs.

The sweet french toast is yummy no doubt served with a hot cuppa!Generally french toast is a good way to use up stale bread as is a yummy bread pudding. But who's asking if you use fresh bread :)

French toast can be served just as it is with fruits and cream, honey, butter or any sauce of your choice. Also you can use slices of french toasts and make your favourite sandwiches.

You need
Bread slices 4 cut half or whole

Milk 4 tablespoons
Salt to taste
Pepper as per your need
Potato 1 small boiled, grated or mashed
Capsicum 1 tablespoon chopped finely
Cilantro chopped finely

  • Mix the eggs and milk in a wide bowl and whisk well with salt and pepper. Then add the vegetables and mix well.
  • Heat a nonstick pan and grease slightly, dip the bread in the egg and vegetables mixture and place it on the pan.Fry the toasts until golden brown on either sides.

  • Serve hot with chutney or tomato sauce and enjoy with your hot cup of tea.

Chocolate crescents

I love baking and Radhika has just the event for all of us who are going crazy about baking.Like her event demands even though i can't post on all days I'll try to post atleast a few this month.

I was keeping away from yeast for a while as i had burnt my fingers a many too times.I found out it wasn't my fault. The mistake was that i had frozen my yeast and that killed it apparently. The fresh yeast works like magic now.

My friend always bakes with whole wheat flour(only) and she gave me her fool proof bread recipe, worked well for me.Since I'm not lucky enough to find a loaf tin or any fancy bread baking tins, i just go ahead and play with the shapes and still better make stuffed breads.

Twisted bread with 2 strands of dough

This is how i made it.Check my previous post on how to shape the crescents.

Whole Wheat flour - 3 cups (sieved)
All purpose flour - 1/2 cup (sieved)
Active dry yeast - 2 1/4 tsp
Oil - 2-3 tbsp + more for greasing bowl
Sugar - 1 tbsp
Salt - 2 tsp
Water - 1 cup (warm) + more if required
Milk - 1/2 cup (warm)
Egg or milk for brushing the tops of the bread

  • Sieve the flours and add all the remaining ingredients and mix well into a soft workable dough.Dough should be soft but not sticky to the fingers.
  • Grease a bowl and leave the dough to rise, apply oil on the dough too.
  • Cover with cling film or wet cloth and leave to double in size.(took about 3 - 4 hours,i left it for a longer time)
  • For the filling:Chocolate chips as required, melt the chocolate chips in a microwave for 1 minute until smooth.
  • Once the dough has doubled, pinch off a ball of dough and roll into a flat circle and cut into 4 portions first half then quarters.Take one quarter and apply the melted chocolate on the broader edge of the dough and roll the thinner edge to cover it up.
  • Repeat for remaining dough and let the crescents raise for another 1 hour or so.Place them on a greased tray and let them rest.
  • Brush the tops with beaten eggs or milk and they are ready to go into the oven.
  • Preheat oven to 180C and push the tray to bake for about 45 minutes or until the tops and bottoms sound hard when knocked with a spoon.

  • Serve yummy chocolate crescents with milk or juice.
          Happy baking :)

Moong Bread Rolls

I was really hungry one afternoon and as i had stashed some cooked moong beans in the refrigerator...it came to my untimely help! The end product was one yummy dish!

I also made wraps out of them and that was even tastier.Me and DH finished off dinner with just the chapatis and these rolls.

This is how i made it...

Green moong beans 1 cup cooked and cooled (drain any excess water)
Bread slices 3
Rice flour 2 tablespoons(or lesser)
Salt to taste
Chaat masala to taste (optional)
Chilli powder 1 tsp ( more or less)
Oil to deep fry

For the wraps:
Chapatis 2
Tomato sauce to spread
Mayonnaise to spread
Chopped vegetables onions, tomatoes, cucumbers as required

  • Add the cooked moong beans to a bowl.Mash it well with hands or the back of a spoon.
  • Soak the bread slices in some water and squeeze out the extra water.Add the bread crumbles into the moong beans.
  • Add the remaining ingredients and mix well into a dry mixture.
  • Heat oil in a wok to fry, make rolls of the mixture and drop into the oil.Fry until crunchy brown.
  • Serve as it is with tomato sauce or make wraps like i did.

  • To make the wraps: spread the tomato sauce, mayonnaise and arrange the moong rolls and vegetables, wrap it up and serve immediately.
  • Delicious rolls ready to served :)

Tips:
- My mix was really runny so i had to add more rice flour which turned out ok too.

- I didn;t have a very dry mix still it didn;t break while frying. But i would suggest to drain off the extra water from the moong beans.
