Corn flour Halwa|Karachi Halwa|Easy Diwali Sweets

I love halwas and only recently I started trying to make them at home.I used to think they are really tough to make. This was my second attempt and my first was with maida/all purpose flour alone. That turned out well too but it was one stage earlier so the pieces were softer than this one.
My laptop fell down two days ago and the screen is all fuzzy, I have all the pictures on it.I really regretted transferring pictures from the camera to it for the first time. These I had saved in the draft and hence forth till my laptop comes I have to bank on the mobile phone camera I guess.

Preparation time : 30 minutes
Recipe Source : Here

You need
Corn flour 1/2 cup
Sugar 1 and 1/2 cup
Water 2 and 1/2 cups
Ghee 1-2 tablespoons
Cardamom powder 1/2 tsp
Orange food color a pinch
Chopped nuts cashews, almonds 2 tablespoons

Greased plate to set the halwa

  • Mix the corn flour, food color and one and half cup water and set it aside. It will look like it has lumps but once you leave it in the water the lumps will go away.
  • Heat 1 tablespoon of ghee and roast the nuts and drain it on a kitchen towel.
  • In a wide mouthed non stick pan, add sugar and one cup of water and heat it so the sugar dissolves.
  • Once the sugar is all dissolved no need to check for any consistency we just need to dissolve the sugar, mix the corn flour solution with a whisk the corn flour would have all settled to the bottom and pour it into the sugar solution.
  • On a medium flame keep stirring as you will start seeing lumps.
  • The corn flour will start turning transparent.Add 1 tablespoon ghee and keep stirring the lumps will go away and the halwa turns glossy and transparent.
  • Add the roasted nuts and keep stirring until the whole mixture starts leaving the pan and clumps around your spoon.Add one more spoon of ghee and keep stirring until the mixture is nice and thick. It will be easy to stir initially and after the halwa consistency has arrived it will be difficult to stir it and the whole mixture will leave the pan and stick around the spoon. This is the right stage to transfer to a greased plate.
  • This halwa sets soon too.Once it has started setting score lines in any shape you want the pieces in.
