No Bake Rocky road pudding

I have a bag of marshmallows sitting for a while in my kitchen and ofcourse we lost interest in eating it.So the quest begins to use it up.And this is where i got to - No bake brownies pudding.


I got this recipe from a random website even though i have used marshmallows in my chocolate puddings earlier i just wanted to know how to make rocky road brownies I;ve seen it on tv many times.But the marshmallows were there to use up.So this is what turned up.I won't call it brownies because the texture isn't fudgy but its very soft just like a pudding.And all that goes in makes it even more super good.Kids will love it.




 Even lil mister someone liked it.YOu can add wafers,nuts,dry fruits, Chocochips anything into it.


 There's not much of a recipe but this is how i made it.

You need
Milk 1 cup
Marshmallows 1 n half cups
Cocoa powder 1 n half tsp
Chocolate chips 1/4 cup/as required
MnMs with peanuts and plain ones 100gm packs each
Dried fruits and nuts as required


  • Heat milk in a pan, when it starts boiling add the marshmallows keep stirring until all the marshmallows melt down into the milk.
  • Add the remaining ingredients and stir once and turn off the heat.
  • I poured into a greased container and was able to make cubes.
  • Pour into the prepared container and refrigerate for 2 hours.


 Indulge in some chocolatey goodness!

Cheesy Pasta Pops

Have you any leftover cooked pasta?Then this what you should try :)
If you are looking for a quick party pleaser look no further!Pasta is my all time favourite lunch or breakfast item but I never thought it would become my 4 o'clock snack ideal too!


I have to go pick my LM at 3 and so i feel hungry at 330pm these days so i end up having an early tea and some snacks.I feel guilty having biscuits and stuff so I have decided to have something healthy for a snack.This is fried now but its a rainy day so i guess thats an excuse to have a fried snack!



 




 This is no hi fi recipe but it definitely tastes super good.Kids will absolutely love this.



Preparation time : 15 minutes

You need

Cooked pasta 1 cup any shape(I used elbows)
Bread slices 2
Cheese 1 tablespoon
Chilli powder 1/2 tsp

Oil to deep fry


  • Add pasta to boiling water and cook it with some salt and oil so it doesn't stick to each other or like i do add it to a pressure cooker and cook it for 2 whistles(that's not the traditional way to cook it i know)
  • Cook pasta and drain the water and keep aside.
  • Mix chilli powder, cheese into the cooked pasta.Mix well.
  •  Dip bread slices in some cold water and squeeze the water out.Mix this into the pasta cheese mix.
  • Make balls of this mixture.
  • Heat oil in a kadhai/wok and fry until golden brown.Drain onto kitchen towels.
  • Serve hot drizzled with tomato ketchup :)  


Delicious quick pasta pops to go with your coffee on a rainy day!

Notes:

  1. Pasta needs to be completely drained and dry once cooked.
  2. Stale bread will work fine.
  3. I used cream cheese but any should work fine.
  4. Bread and cheese are the binding agents here.

Badusha

This is the first indian sweets i had posted in my blog about 2 yrs back.I made it again a few weeks back and i thought i must update the pictures now ;)


While making them this time i felt they are almost so similar to glazed doughnuts :) The only difference doughnuts have yeast in them.Out of the whole process (which is very simple) I enjoyed the glazing part the most.But it happens to be the most tricky part of this sweet too.


 Unlike the first time where i heated the sugar syrup a single string consistency this time i made the sugar into a rolling boil and added all the fried badushas into the sugar syrup and swirled it until they were all uniformly coated.But with this method i felt the sugar coating was falling off but with the single string consistency it didn;t happen i recall from the first time.

Preparation Time : 30 mins
























You need (to make 10 small sized baadushas ):

All purpose flour 2/3 cup
Yogurt/curd 1/3cup
Sugar 1 tbsp
Baking powder 1/3tsp
Cardamom powder 2 pinches
Ghee 1 tsp

- You need to make a nice soft dough using the flour, yogurt, baking powder,sugar(1tbspn) cardamom powder and ghee.Add enough ghee so the dough doesn't stick to your fingers.
- This will form a nice soft dough which you need to set away for about an hour.
- Knead this dough for about 5-7 minutes and keep it covered for about 30 minutes or more.
- Then make small gooseberry sized balls of the dough and make a thumb impression at the centre of each ball.
- Deep fry these flattened balls on very low heat.They will turn golden gradually.This is needed so the balls cook through inside.

For the sugar coating :
Sugar 2/3rd cup , Water 2/3rd cup, Seeds of one cardamom pod.

You need to add both the sugar and water on low temperature until the sugar dissolves and then heat on low flame until the sugar syrup reaches a one string consistency(when you take the syrup and let it drop from the spoon it should fall forming a string)


Once you fry the balls coat each of them in the sugar syrup and let it dry.Once they are dry, there you have yummy baadushas ready to eat :)


Enjoy Hot badushas and home made sev with tea!Enjoy the rains :) 


Tips:
1.Add enough ghee to the flour mix so it doesn't stick to your fingers.
2.I read from the original recipe that you need to make the thumb impression because of the added baking powder or else the balls will go fluffy while frying.
3.Since you need to fry the balls on the low heat, you can make the sugar syrup while frying the balls or else if the syrup cools down it crystallizes(i learnt from my mistake) to avoid the crystallization add a few drops of lime juice to this.
4.Don't worry about the sugar consistency it will come about gradually in about 10 mins of low heating the sugar and water.

Chicken fry with coconut milk

We have a Restaurant that has a large grill outside it and everytime we pass it we were tempted to buy until last week we tried it.Yuck it was the worst grilled chicken ever!My LM who is an absolute chicken lover hated it.Until i made this for her the next day as promised I was scared she'll detest chicken after having that grilled one!


This dish tastes best with an easy dal and rasam just an everyday lunch can be taken to totally different levels with this chicken fry.This is a the first time I tried adding coconut milk to a dry chicken dish and it was one winner of a recipe.




You need 

Chicken 250 gms
Potato 2 small

Marinade
Crushed ginger 1/2 inch piece
Crushed garlic 5-6 pods
Green chilli 1
Curry leaves 5-6
Aniseeds/Saunf/perumjeerakam 1 tsp
Salt to taste
Turmeric powder 1/2 tsp
Chilli powder 1 tsp



Crush all the above in a mortar and pestle and add it to the chicken.And rub it onto the chicken and leave it in the refrigerator over night.

To make the gravy
Coconut oil 2 tablespoons
Curry leaves 2 sprigs
Mustard seeds 1 tsp
Onion 1 large sliced finely
Tomato 1 small
Coconut milk 1/4 cup
Roasted and crushed whole spices (2 cardamoms,cloves,cinnamon and one petal of a star aniseed)


  • Heat oil in a wide kadhai/wok, add the mustard seeds and curry leaves, now add the onions.
  • Add the chicken once the onions go transparent.
  • Let this cook in its own juices don't add any water.Add the tomato and cover.
  • Add the potatoes once the tomato is all broken down.
  • Cover and cook until chicken is tender and soft.
  • Check for spices if you want it more spicy add half a spoon of garam masala to this.
  • Add the coconut milk at the end once the chicken and potatoes are done.
  • Cook on low heat until the coconut milk is all soaked up by the chicken.
  • Serve hot with sambar, rasam and cabbage kootu like i did!

Chicken Fry - A friendly Guest post

I had decided to do a guest post each month.Last month it was an Onam special this month its this chicken dish. Vidya was my neighbour when i used to stay in Bangalore three years ago.We are still sms friends :) and we are hoping to discuss our kids' weddings via sms too :) I used to wonder why these mobile phone operators gave sms packs now i know its for people like us.We easily send around 100 sms each day good work outs for both our fingers and the mobile phones :D



Vidya was my second neighbour after i got married. I'm usually not a very outgoing person but still i can shut up and sit inside so one day when my DH told me theres a tamil family next door and they have a baby too i went knocking on their door and little did i know i found the friend - mentor- soul sister call her anything but she's been a part of me ever since.We used to speak to each other daily over the intercom then chat at nights being next door.We used to chat and take long strolls with our babies.What a beautiful time we had and now both of us often miss those times.Oh and i forgot to mention how we used to exchange food :D yum the best part.We both used to try food and exchange it!I still miss having a good neighbour like her and i know noone can take her place ever.This is one such recipe from Vidya's kitty and she's one enthusiastic girl when it comes to cooking especially nonveg dishes!

Here's how she makes it :

Ingredients : 
Curry leaves few sprigs
Coconut milk quarter cup
Green chillies 2 slit
Coriander leaves to garnish
Lime juice of half a lime
Oil 2 tablespoons

Marinate chicken with all of the below spices  for half hour or more :

Chicken 250 gms 
Chilli powder 1 tsp
Dhaniya powder 1/2 tsp
Jeera powder 1/2 tsp
Corn flour 1 tablespoon
Ginger garlic paste 1 tsp
Garam masala 1/2 tsp
Turmeric powder 1/4 tsp
Curd 1 tablespoon 


  • To marinate with chilli powder ,dhaniya and jeera powders, turmeric powder, corn flour, ginger garlic paste and garam masala with curd and salt.Allow to rest for half hour. 
  • Shallow fry the chicken until done.
  • Heat oil in a pan, add curry leaves, green chillies and add quarter cup coconut milk and add chicken and cook until it becomes dry.
  • Garnish with coriander leaves and squeeze lime juice.

Serve hot with ghee rice or roti or parotta :)

Easy everyday Egg Curry

Eggs are the true life savers in every sense.You need them to bake anything and also if you run out of everything else in the kitchen you can have a healthy filling meal just with eggs and bread :) my fav combination of food anytime all the time.



Anytime i feel like eating something spicy this is my go to curry.I enjoy making it as much as i enjoy eating it :) and it goes so well with flavoured rice and rotis and even bread.


To boil the eggs, I always use the pressure cooker.Add water enough to cover the eggs upto half.I turn off the cooker just when the whistle is about to come.

Preparation Time : 20 minutes

You need
Boiled eggs 3
Onion finely sliced 2 large
Tomato 2 large sliced finely
Ginger garlic paste 1 tsp (optional)
Oil 1 tablespoon
Mustard seeds 1 tsp
Curry leaves 2 sprigs
Coriander/Dhaniya powder 1 tsp
Red chilli powder 1 tsp
Salt to taste
Coriander Leaves to garnish


  • Boil and peel the eggs and chop into any desired shapes you like.
  • Heat oil in a pan, add the mustard seeds let it pop then add the onions and curry leaves.Let the onions turn nuce and soft.
  • Add ginger garlic paste then the sliced tomatoes.Cover and cook this until all turns into a soft mash.
  • Add the masala powders and fry until the oil leaves the sides.
  • Add the salt and a little water.
  • Add the chopped eggs and spoon the gravy over the eggs cover and cook for 2 minutes and switch off the flame.
  • Serve hot with phulkas or chapathis or with veg pulav.
