Achi murukku |Achappams |Rose cookies using rice flour

Rose cookies or achi appam as they are called in tamil nadu or achappams in kerala are definitely the sign of Christmas.I made them last week when mom was around she always makes them and it was really simple this time around as i used store brought rice flour.I had tried it with raw rice i felt it was a bit tedious.

Rice Murukku

I'm already in the Christmas mood. Its still only the first week of my favorite month. And I'm hoping to post a few Christmas goodies posts. This being the first of them :)

Murukku is a common fried snack in all parts of India especially the South.I had earlier tried the  yellow moong murukku check it out here.
Now i tried this which is a more traditional way to make the murukku. With the remaining dough i tried to make seedai which are fried balls of the same dough.

You need
Rice flour 1 cup
Urad dal (roasted and powdered) 3 tablespoons
Ajwain seeds/Carrom seeds 1 tablespoon
Salt to taste
Butter 2 tablespoons
Oil to deep fry
Murukku maker/press

  • Mix all the ingredients to make a soft dough. Not to sticky just right a pliable dough.Adding too much butter will make the murukku go too soft and so will not hold the shape, ending up with broken murukkus.
  • Heat oil in a kadai/wok, press the dough out in a murukku press/achi into the oil, fry until golden brown.
  • Drain the fried murukku on tissue papers.
  • Repeat for the remaining dough. Before putting each batch of dough into the press wet your hands and roll the dough so it won't go too dry and thus difficult to press out.
  • For the last batch of dough, roll them into tiny balls and deep fry them to make the seedai.

  • Store in airtight containers.keeps good if stored well for about a week.
  • Serve and share with friends and neighbors during the Festive season.

Fried Rice crispies : Black and White Wednesday

I love sending pictures to Susan for the BWW event. There are a number of beautiful, speechless pictures that scream out a million messages.

I make small batches of these murukkus because my lil one will finish off only these in her snack box.Officially, also festival goodies too.Since Christmas is almost here,I'm making them more often now.
