Everyone knows how versatile eggs are!I needn't say anymore. This is my instant quick fix lunch on days I don't pack lunch for the DH. Its so quick, simple and yummy too.Also whenever we need a to sneak in vegetables to the little ones this has to be the best option.This one has been in my drafts for a while now and I will be making this for lunch so I dug it out to post it.

Easy everyday Egg Curry
Eggs are the true life savers in every sense.You need them to bake anything and also if you run out of everything else in the kitchen you can have a healthy filling meal just with eggs and bread :) my fav combination of food anytime all the time.
Preparation Time : 20 minutes
You need
Boiled eggs 3
Onion finely sliced 2 large
Tomato 2 large sliced finely
Ginger garlic paste 1 tsp (optional)
Oil 1 tablespoon
Mustard seeds 1 tsp
Curry leaves 2 sprigs
Coriander/Dhaniya powder 1 tsp
Red chilli powder 1 tsp
Salt to taste
Coriander Leaves to garnish
Anytime i feel like eating something spicy this is my go to curry.I enjoy making it as much as i enjoy eating it :) and it goes so well with flavoured rice and rotis and even bread.
To boil the eggs, I always use the pressure cooker.Add water enough to cover the eggs upto half.I turn off the cooker just when the whistle is about to come.
Preparation Time : 20 minutes
You need

Ginger garlic paste 1 tsp (optional)

Curry leaves 2 sprigs
Coriander/Dhaniya powder 1 tsp
Red chilli powder 1 tsp
Salt to taste
Coriander Leaves to garnish
- Boil and peel the eggs and chop into any desired shapes you like.
- Heat oil in a pan, add the mustard seeds let it pop then add the onions and curry leaves.Let the onions turn nuce and soft.
- Add ginger garlic paste then the sliced tomatoes.Cover and cook this until all turns into a soft mash.
- Add the masala powders and fry until the oil leaves the sides.
- Add the salt and a little water.
- Add the chopped eggs and spoon the gravy over the eggs cover and cook for 2 minutes and switch off the flame.
- Serve hot with phulkas or chapathis or with veg pulav.

Egg Biryani
Biryani is something everyone likes.And eggs are everyone's favourite period.Noone will ever say no to an egg and 'sunday ho ya monday roz khao andey!"(means have an egg daily).This is the dish you want to have when you are super lazy and still feel like having something really spicy and yummy.
I cooked the egg biryani in my Indina pressure cooker and it did not blow up in my face!"
This is my best pal in the kitchen, the pressure cooker is really a boon to India.Looking at my kitchen over flowing with vessels and cutlery i wonder why I need so much, when i well managed close to a year with just 4 vessels one among them being my prized Hawkins pressure cooker.I have a bigger one which i hardly use because this lil one is so handy to use and wash up.I used to do everything in this lil guy while i was in london my day used to start with it and end with it.Like the ad ' Hum Hawkins ke bina chal nehi sakthe" ( its impossible without a Hawkins.)
This is a simple recipe i found on some random website long ago and I have added my changes to it to suit my taste.
Tips:
- Water content may vary from brand to brand.I add 2 cups of water for the rice to cook nice and long.
- Cooking time varies from cooker to cooker and the heat you set the cooker on.
- Pricking the eggs help the masala to get into it.

Basmati rice 1 and half cups (soaked for half hour and drained)
Water 3 cups
Hard boiled eggs 2
Onions 1 large/ 2 medium sliced finely
Tomato 2 large
Ginger garlic paste 1 heaped tsp
Green chillies 2 slit at the tip
Curry leaves 2 sprigs
Coriander leaves a small bunch
Chilli powder 1 tsp
Dhaniya powder 1 tsp
Garam masala 1/2 tsp
Fennel seeds 1 tsp
Whole garam masala spices cardamom,cloves, cinnamon, 2 3 each
Salt to taste
Lime juice 2 tsp
- Keep the hardboiled eggs ready and make pricks with a fork on all 4 sides of the eggs.
- Heat oil in the pressure cooker, add the whole garam masala, fennel seeds, curry leaves, green chillies and stir well.
- Now add the sliced onions and fry till brown.Add the ginger garlic paste next.
- Add the chopped tomatoes fry well until the tomatoes smash well.
- Add the chilli powder, dhaniya powder,garam masala and cook well until the raw smell goes away.
- Now add the drained basmati rice let it turn translucent.
- Add the eggs and let the spices coat the eggs well, once thats done add the water and add salt to taste.
- Add the chopped coriander leaves and lime juice.
- Cover the cooker and cook on medium flame for 12-15 mins or for 2 whistles.
- Let the pressure release completely and fluff the rice up with a fork.
- Serve hot with papads and raita.

Scrambled eggs and bread - twist to your morning breakfast
A brand new year has arrived and Hope you are all having a good time welcoming it.While we love to indulge in some good food, breakfast needs to be a hearty affair and this one is a refreshing twist to our daily breakfasts.
Bored of your daily breakfast - eggs and bread?Try this version of the humble breakfast!
My mom used to make this often especially when we have leftover stock of bread.You can call it a remake- recipe.I simply love it and so will little kids.Especially if my mom makes it for me i can have it everyday :) Such a bliss to have someone make breakfast and tea for you!
You can make this with or without eggs (for those who want a vegetarian version) but eggs make a huge difference to this recipe.
You need
Bread 5-6 sliced chopped into small squares / as much as needed
Eggs 2
Onions 1 large sliced finely
Tomatoes 2 large chopped finely
Curry leaves 2 sprigs
Oil 1 tablespoon
Mustard seeds 1 tsp
Chilli powder 1 tsp
Garam masala powder 1 tsp
Salt to taste
Coriander leaves/cilantro a few sprigs chopped finely
- Heat oil in a large pan/vessel, add the mustard seeds let them pop.Add curry leaves, followed by onions let it fry well.
- Once the onions are nice and soft add the tomatoes and let it cook well and get mashed.Add a little salt to speed up this step.
- Add chilli powder, garam masala and fry well.
- Now add the eggs and mix well so they get scrambled.
- Next add the chopped bread and mix well.Check for salt.
- Sprinkle chopped coriander leaves and serve hot with a mug of coffee!

Chettinad style Egg curry/kuzhambu
Its so difficult to wake up on weekends and to cook don't even ask.Thats when i thought of making this curry and my ghee rice with some ready made coconut milk powder.What a breeze of a lunch it was!
You need
Hard boiled eggs 3
Baby onions 10 nos
Tomato 1 small
Tamarind 1 small lime sized ball
Coriander/dhaniya powder 1 tsp
Chilli powder 1/2 tsp
Turmeric powder 1/4 tsp
Pepper corns 1/2 tsp
Cumin seeds 1/2 tsp
Ginger garlic paste 1 tsp
Green chilli 1 slit
Garam masala whole - cloves, cardamom, cinnamon 2 each
Salt to taste
To temper
Oil 1 tablespoon
Curry leaves 1 sprig
Mustard seeds 1 tsp
I saw this recipe at Jay's Tasty Appetite and i immediately wanted to try it out.The most difficult part in this meal would have been to squeeze some fresh coconut milk but since i used ready made powdered coconut milk it was simple.
You need

- Heat pan add a little oil and roast the whole spices, pepper corns,cumin seeds and add the onions and fry well too.Once the onions are brown, add tomato and roast well.
- Turn off the heat and add the dhaniya powder and chilli powders.
- Let this cool and grind to a smooth paste.
- Heat oil in a pan, add the mustard seeds and curry leaves,Add ginger garlic paste and green chillies.
- Now add the ground onion masala paste and cook it well.
- Add the tamarind water and let the raw smells go away.
- Check for salt and add turmeric powder
- Add the hard boiled eggs.Pricking them with a fork will help some spices to get into the eggs.
- Serve hot with ghee rice or chapathis.

Savory French Toast
I have mentioned this a few times in my blog that I'm a bread-lover.This toast is so yummy and easy to make for a easy breakfast on the go.I have added some vegetables to the toast which makes it extra tasty and healthier.
Like you all may already know french toasts can be served both sweet and savory.This is a slightly pepped up version for you people who love your morning bread and eggs.
The sweet french toast is yummy no doubt served with a hot cuppa!Generally french toast is a good way to use up stale bread as is a yummy bread pudding.But who's asking if you use fresh bread :)
French toast can be served just as it is with fruits and cream,honey,butter or any sauce of your choice.Also you can use slices of french toasts and make your favourite sandwiches.
You need
Bread slices 4 cut half or whole
Egg 1 beaten
Milk 4 tablespoons
Salt to taste
Pepper as per your need
Potato 1 small boiled,grated or mashed
Capsicum 1 tablespoon chopped finely
Cilantro chopped finely
- Mix the eggs and milk in a wide bowl and whisk well with salt and pepper.Then add the vegetables and mix well.
- Heat a nonstick pan and grease slightly, dip the bread in the egg and vegetables mixture and place it on the pan.Fry the toasts until golden brown on either sides.
- Serve hot with chutney or tomato sauce and enjoy with your hot cup of tea.
