Sheera/ Semolina Pudding
Sheera(from the north) is just a distant cousin of our Rawa kesari from the south.Its surprising how India is so much diverse in its cultures and its cuisines.Similar foods with different names and variations made all across the length and breadth of our country.There are more than one names and versions to this sweet.
I make sheera often for my LM who surprisingly doesn't love the fluffy kesari(orange color especially) and that kesari is also a big too sweet for her.I made Sheera with less fat and sweet a low cal version for her i must say but I'm happy she likes it atleast.
But this is a simplified version i know the oringal Maharastrian version uses much more ingredients like coconut, sesame seeds.
You need
Rawa/semolina 1 cup
Water 1 cup
Milk 1 cup
Butter 1 tablespoon
Sugar 3 tablespoons (or more)
Cardamom/elaichi/elaka powder a pinch
Salt a pinch
Almonds 4 slivered
- Heat butter on a low flame add the rawa to this and roast until it gets fragrant.
- Add the milk and water and cover and cook until the rawa soaks all the liquid.
- Add the sugar and mix well.
- Toast the nuts in a teaspoon of butter and top the sheera with it.
- Enjoy yummy sheera with your evening tea.
Some of my notes :
- Adding raw or roasted rawa is ok as we toast it with butter first.
- You can be more generous with the sweetness and the butter it will be still better :)
- Once this cools it will be a little tight in consistency but thats because of the lesser oil and liquid content.

Rawa Idli- Steamed semolina cakes
Instant(almost!) breakfast idea = Rawa idlis.I made this on a weekend when i usually run out of dosa batter and everything else.So I decided to try these easy idlis.They were smooth soft and filling.
The secret ingredient to making these idlis is curd/yogurt and a pinch of baking soda/eno fruit salt.You just have to mix it all up and leave it overnight and steam the idlis in the morning.Done!
Since the rawa/semolina is a little bland you have to work on the extra flavouring part and make a nice coconut chutney to accompany it.We all loved it at home.It was super filling too.
I checked a few recipes before i settled on this one.
You need
Roasted rawa/semolina 1 cup
Curd 2 cups + a little water/curd (to get the consistency right)
Salt to taste
for the seasoning
Oil 1 tablespoon
Mustard seeds 1/2tsp
Channa dal/bengal gram 1tsp
Urad dal/black gram 1/2tsp
Curry leaves 1 sprig chopped finely
Coriander leaves few sprigs chopped finely
Cashew nuts chopped and roasted in ghee few
Grated carrot 2 tablespoon
Ginger grated 1/2 tsp
Grated coconut 1 tablespoon or more as per your taste
Just before steaming the idlis we need to add 1tsp of baking soda/eno fruit salt
- Mix the roasted rawa with the curd and salt and leave it overnight.
- In the morning, heat oil in a pan and add the ingredients for the seasoning one after the other.
- Mix this seasoning into the raw/curd mixture and stir well.
- Grease the idli moulds and then mix the baking soda to the rawa idli batter.
- Pour spoonfuls of batter into the greased moulds , garnish the idlis with a cashew and few pieces of carrot gratings and place the idli stand into the steamer and cover the vessel and cook for 10-12 minutes or until done.You can use the pressure cooker without the whistle.
- Once cooled, the idlis are ready to be served with coconut chutney.

Rawa Dosa
This Rawa dosa is a quick breakfast you can whip up on a lazy weekend morning! If you have all the ingredients(easy always there in the kitchen stuff) in hand it can be made and served all within an hour's time.
You need
Semolina/white rawa 3/4th cup
All purpose flour 1/4 cup
Rice flour/(left over dosa batter) 2 cups
Baking powder a pinch(optional)
Salt to taste
Curd 1 cup
Water 1 cup ( or less as you need to make a runny dosa batter)
Oil 2 tablespoons
For the tempering
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Chillies chopped finely (green/red) 2
Ginger 1" piece chopped/ grated finely
Grated coconut 2 tablespoons(optional)
Curry leaves chopped 2 tablespoons
Cilantro chopped 2 tablespoons

- In a pan,heat oil and add the tempering and keep it in a bowl.
- Mix the flour, rawa with the curd and sufficient water to make a dosa batter.
- Mix the tempering into the dosa batter.
- Heat a pan and pour out ladle-fulls of batter and swirl the pan so the dosa is a nice thin one.Drizzle sesame oil/ghee as you please to make the dosa extra tasty!
- Serve crispy dosas with peanut chutney :)
(I follow the same when i have some leftover dosa batter.)
To make the peanut chutney
Peanuts handful roasted,peeled
Coconut scrapped 2 tablespoons
Ginger 1' piece
Cumin seeds 1/2 tsp
Tamarind a small piece (gooseberry size)
Green chillies 2
salt to taste

- Grind all the above into a smooth paste adding sufficient water.
- Temper (if you need to) with oil, mustard seeds and curry leaves.
