Crispy Bhindi/Okra/Ladyfingers

Fried bhindis/ladyfingers are really yummy, when i was young our family friend in Mumbai, whenever this aunty invited us over for lunch,she made fried bhindis and aloo tikkis (potato patties) and i used to love them both :)





I saw Anjum Anand make this on Indian food made easy and tried it immediately,its just a variation to the normal fried bhindis.



This tastes good with any dals and steamed rice.I served it with tomato curry and steamed rice.You can fry it to a soft crisp bhindi or crunchy munchy bhindis by adding more of the flours.


You need

Ladyfingers/okra/bhindi half kg
Besan/gram flour 2 tablespoons(or more)
Rice flour 1 tablespoon(or more)
Salt to taste
chili powder 1 tsp
Chaat masala to sprinkle (optional)
Oil to deep fry

 -Wash the bhindis,dry them on a kitchen towel and snip the ends of the bhindi and cut into about 2 inch pieces.
 - Sprinkle the besan,rice flour salt and chilli powder over the chopped bhindis and add a little water so that the powders coat the bhindi roughly.
- All to sit for some time and deep fry this.Drain on a kitchen napkin.



- Serve hot with dal and rice :)

- Enjoy the crispy bhindis :)

Ladyfinger in tomato gravy/Bhindi masala

I came up with this idea inspired from our common egg burji recipe.I followed suite and this recipe is a keeper!



I regularly make this as its easy to make and also tasty,makes a good combi for both steamed rice and chapatis or indian breads.



You need
Okra/Ladyfingers/bhindi/vendakka 2 cups chopped into 1 inch pieces
Onion 1 large chopped finely
Tomato 1 large chopped finely
Garlic 2 pounded/chopped finely
Turmeric powder 1/4 tsp
Coriander powder 1 tsp
Red chilli powder 1 tsp
salt to taste
Cumin seeds 1 tsp
Lime juice 1 tsp
Oil 2 tablespoons

  • Shallow fry the bhindi/vendakka in a pan until the gooey-ness goes away.
  • Heat oil in pan, splutter cumin seeds and then add the onions and fry until translucent.
  • Add the garlic and fry, now add the tomato and let it fry well until the tomato mashes and also the oil starts coming out of the sides.
  • Now add the masala powders turmeric powder, coriander powder, red chilli powder and salt.
  • Add the fried bhindis and add little bit of water so that the bhindis go soft and get coated well in the onion tomato masala.
  • Add the lime juice just before you turn off the stove.

  • Serve bhindi masala hot with chapatis or steamed rice and more kozhambu (spicy yogurt curry).

Aloo Bhindi

I tried this recipe long ago I'm just editing it to follow the rest of my newer posts.Potato is one versatile vegetable like all of you know.Its tastes well with almost every vegetable.And whenever we need to give a different twist to the same old veggies aloo is the answer!




You would need


Bhindi/okra/lady finger- chopped into 1 inch pieces - 250 gms
Potato - 1 cubed
cumin seeds - 1 tsp
Chilli powder - 1tsp
Turmeric powder - 1/4 tsp
Oil - 3-4 tbspns
Salt as required

Procedure
  • Add oil in a saucepan,add the cumin seeds and let them pop.
  • Now add the potatoes and let them fry, next add the add the okra to this,allow to fry.
  • Add chilli powder, turmeric,salt and stir well.
  • Cover and cook until the potatoes and okra are done.This dish needs more oil or else the bhindi will get all slimy.
  • Serve with hot chapatis.
