Stuffed Ladyfingers/Bhindis

Its International Women's Day, I'd like to wish all the beautiful ladies - grandmoms,mothers,sisters,daughters a very Happy Women's Day.Hope women get more respect in all aspects in our country.Today I share this simple stuffed bhindi recipe to celebrate Women's day to celebrate ourselves.



We only need to flip through the newspapers and we can that our country is adapting the western culture with faster speed but also forgetting the dignity that women need and get.In a huge media crazy country like ours we have television soaps showing abuse of housewives daily.It hurts to think people can pen such scripts, and then we have no right to even blame any person abusing women because its all right in every sense in our country.Us women most of the time forget to eat what we cook and this ignore our health, we have to remind ourselves to eat healthy food and take care of us before we do the same to our families   





You need

Bhindis 10-12 large ones
Oil to cook the bhindis

For the stuffing
Cumin seeds 1 tsp
Onion 1 large chopped finely
Tomatoes 2 medium chopped finely
Kasuri methi 1 tsp
Salt to taste
Ginger crushed 1/2 inch piece
Garam masala powder 1 tsp
Coriander powder 1 tsp
Oil 1 tablespoon
  • Chop the onions really finely i used my trusty chopped which almost minced the onions.Same for the tomatoes.
  • Heat oil in a pan, add cumin seeds, add the onions next on a low flame let the onions turn translucent
  • Add the crushed ginger, followed by tomatoes, add a little salt so the tomatoes break down faster.
  • Once the onions and tomatoes have become mushy add the garam masala powder and dhaniya/coriander powder.
  • Finally when the powders have cooked thoroughly crush the kasuri methi in between your palms and add the powder.Turn off the heat and set aside to cool.
Preparing the bhindis/ladyfingers





  • Cut off the top and the tails of the bhindis.Make a deep slit through the centre of the ladyfinger but be careful not to cut it through to the other side.
  • Using a small spoon or your hands stuff a little of the above stuffing into the slits of the bhindis.
  • Heat oil ( 2-3 tablespoons) to shallow fry the bhindis.
  • If you have remaining stuffing, once the bhindis are soft and tender slather it over the bhindis and cover and cook for 2 minutes.Turn off the heat.


  • Serve hot stuffed bhindis with roti or chapathis.

    Mutton and okra curry

    We had an Iranian restaurant near my place in Dubai and it always had a buffet banner outside it.We used to wonder anyone can always have a discounted buffet offer.But this place was pretty good.They used to have a decent array of dishes and soft rotis.This curry is a beautiful blend of the meat and soft tender lady fingers.



    On that menu i tasted this weird combination of a curry for the first time.I was confused if i should even taste it because the thought of bhindis and mutton wasn't too pleasing for me.But when i tried it, the taste was super.Iranian food tastes a lot like our Indian food and so we are bound to like it.





    To make this curry you need

    Mutton 250 gms
    Onion 1 large
    Tomato 2 small or 1 large
    Small okra/lady finger 10 numbers slit in half lengthwise
    Ginger garlic paste 1 tablespoon(1/2+1/2)
    Salt to taste
    Dhaniya/Coriander powder 1 tablespoon
    Red chilli powder 1 tsp
    Turmeric/haldi powder 1/4 tsp
    Garam masala 1 tsp

    - Marinate the mutton with chilli powder, ginger garlic paste, salt,lime juice and turmeric for half hour.Cook in pressure cooker until soft for around 10 -12 minutes.
    - Fry slit lady fingers in a generous amount of oil until wilted and drain onto kitchen towel.
    - Draining excess oil, in the same pan, fry onions until soft, followed by remaining ginger garlic paste.
    - Add Tomatos and let it get really soft.
    - Add coriander powder, chilli powder, home made/ready garam masala, salt and saute well.
    - add the cooked mutton and let the water reduce.Add the fried lady fingers and stir once.Cover and let it cook until the gravy had coated the meat and lady finger well.





    Serve hot with hot rotis or flat breads or pita bread!

    Crispy Bhindi/Okra/Ladyfingers

    Fried bhindis/ladyfingers are really yummy, when i was young our family friend in Mumbai, whenever this aunty invited us over for lunch,she made fried bhindis and aloo tikkis (potato patties) and i used to love them both :)





    I saw Anjum Anand make this on Indian food made easy and tried it immediately,its just a variation to the normal fried bhindis.



    This tastes good with any dals and steamed rice.I served it with tomato curry and steamed rice.You can fry it to a soft crisp bhindi or crunchy munchy bhindis by adding more of the flours.


    You need

    Ladyfingers/okra/bhindi half kg
    Besan/gram flour 2 tablespoons(or more)
    Rice flour 1 tablespoon(or more)
    Salt to taste
    chili powder 1 tsp
    Chaat masala to sprinkle (optional)
    Oil to deep fry

     -Wash the bhindis,dry them on a kitchen towel and snip the ends of the bhindi and cut into about 2 inch pieces.
     - Sprinkle the besan,rice flour salt and chilli powder over the chopped bhindis and add a little water so that the powders coat the bhindi roughly.
    - All to sit for some time and deep fry this.Drain on a kitchen napkin.



    - Serve hot with dal and rice :)

    - Enjoy the crispy bhindis :)

    Bhindi masala

    500 gms okra
    100 gms chopped onions
    100gms chopped tomato
    1tsp green chillies chopped
    200gms onions gravy/paste
    salt to taste
    1/2 tsp each coriander powder,cumin powder,red chilli powder
    2tsp chopped coriander
    50gm curd

    Method
    • cut okra into slices and deep fry
    • heat oil in frying pan,add in onion,garlic,green chillies,tomatoes and saute till golden brown.
    • add onion gravy in it.
    • add fried okra to it and mix well.
    • add all seasoning
    • finally add curd and cool till well done.
    • pour in a serving bowl and garnish with coriander leaves.
