Corn balls

Kids return hungry from school and we moms try to feed them healthy, it remains the same routine day in day out.My kids love corn but sometimes I feel scared giving them the same things they like every week too, what if they get bored of that.So a change is always welcome.

Golden Puris & Parathas

This month's Magic Mingle combo is wheat and corn.I've been struggling to somehow get the lunchbox empty from school...but in vain.I tried these puris which are her absolute favourite today.I also made parathas but the puris looked like golden risen blobs of dough frying in the pan.





I haven't added much flavouring to these puris because its for the little one but still they looked fantastic because of the colors in them.



You need

Whole wheat flour 2 cup
Carrots grated 1/2 cup
Corn 1/2 cup
Semolina 2 tablespoons
water to make a non sticky puri dough
salt to taste
Oil to deep fry



  • Grate the carrots and cook the corn kernels.I used frozen corn so i boiled it in salt water for a bit and  grind it to a smooth paste.
  • Mix the carrots and the corn paste to the wheat flour and the rest of ingredients and make a smooth dough.
  • Roll out into small circles and fry them in oil.Else if making parathas roll them into bigger circles and cook them on a flat griddle/tawa.

  • Serve hot with sauce or yogurt.
-If i were making it for me , i'd have added extra seasoning or masalas and served with some spicy curry :)
- If you like you can stuff the puris/parathas rather than mixing it in with the dough.I didn't do it as my daughter will pick out the stuffing.

Corn pearls:B & W Wednesday

Its wednesday :) I have been looking forward to today as I need to make 2 entries today one to BWW @ thewellseasonedcook and Blog hop wednesdays@ticklingpalates .

I was admiring the corn pearls(kernels) while making some popcorn to munch in the car for a long drive.And i knew it was going to be my next entry!



Popcorn is the easiest and healthiest snack to munch on.Healthy - if you make it at home from the shop packed kernels(yes these are available check on the grains rack in shops), the ready-to-make/microwaveable ones are overflowing with oils, you do not need that amount of oil(trust me)!
Get that wok and some corn kernels and get popping :)

Samosas

Samosas are triangular stuffed savory snacks, they are popular everywhere in India and also in many other parts of the world, samosas are made with a variety of crusts(for instance i saw on tv they made the crust with tortilla wraps) and fillings(vegetables,meat, etc get imaginative)!I am a big fan of it.Since we moved here, I've started buying them rather often.And so my anxiety started to try it at home.I really need to get into the "mode" to do anything and everything!So i got down to do it one afternoon.And it wasn't all that bad!





To make about 10 small sized samosas,you need

For the outer crust:
All purpose flour/maida 1 cup
Water enough to make a smooth dough
Salt to taste
Oil 1 tablespoon to make the dough less sticky
Oil to deep fry the samosas
  • Knead the dough well and leave it aside for 2 hrs.

For the stuffing no.1:
Potato 1 medium sized boiled and mashed
Capsicum 1 small cut into small bits
Salt to taste
Turmeric a pinch
Cilantro chopped 1 tablespoon
oil 1 tsp
Cumin seeds 1/2 tsp

For stuffing no.2
Paneer 2 tablespoons crumbled
Corn 2 tablespoons boiled and cooled
Salt to taste
Chilli powder if u like
Tomato sauce (optional)



  • Heat the oil add the cumin seeds, let it pop, now add the capsicum and cook till soft.
  • Next add the mashed potato and combine it all with the spices and cilantro.
  • Let this mixture cool.


To make the samosa
- Make a paste of 1 tsp maida and water to use as a glue to paste the edges.



- To make the outer crust, roll the dough into a circle the size of a chapati.Cut this into half and take one      semicircle and fold the ends to form a cone shape.
- Make the stuffing with a teaspoon and seal the edges with the maida+water glue.
- Repeat the same for the remaining dough.And leave it in the fridge until you need to fry it.(this makes the crust crispier)

  • Deep fry the samosas and serve hot with sauce/tamarind chutney :) and masala chai!
With the festival of lights just around the corner, this is an easy snack to make and impress our guests/friends, as you can make it all ahead of time and leave it in the refrigerator and fry it just in time!Happy Festivals!

Chicken filling for Crepes

V had got some ready made crepes from his travel trip this time.And I was wondering how to experiment with it, with my imagination running wild.I looked up a few sites and finally decided on this one.

To make this filling for 4 crepes, you need


Chicken breasts/thighs (cooked with salt and pepper and shredded) a bowl full
Capsicum 1 small chopped finely
Onions 1 medium chopped finely
Corn kernels half cup full
Tomato 1 medium chopped finely
Cream Cheese 1 tablespoon
Garlic 3 pods crushed/grated
Cumin powder 1/2 tsp
Pepper powder 1/2 tsp
Chilli powder 1/2 tsp
Green Chilli sauce 1tsp
Lime juice 1tsp
Oil/butter 2 tablespoons
Crepes 4

  • Heat the oil in a sauce pan, add the grated garlic to the oil and immediately add the onions and let it fry until translucent.
  • Next add the corn and capsicum and they need to be fried until soft.
  • Add the spices cumin,pepper,salt,chilli powders and let the vegetables cook in it.
  • Add the chicken and fry well until blended well.Add the green chilli sauce.Add the tomatoes lastly and stir well.
  • Add the cheese and turn off the heat.stir well so the cheese will melt and form a thick coating over the rest of the ingredients.

  • Heat a pan, toast the crepes for about a few seconds on each side.Serve with the a few spoonfuls of stuffing :) and add tomato sauce if you like :)

Crazy corn

My lil one loves corn in any form.Me and my sister used to love the crazy corn in the malls.Then to our delight we discovered frozen sweet corn!Such a blessing!My sister got home a pack and I tried this out or the other way round maybe (not sure)!


You need
Frozen corn 1 cup
Butter 1 tsp or as you need
Salt to taste
Pepper as you need
Lime juice 1/2 tsp

  • Prepare the corn as per the instructions on the pack microwave or on normal stove.
  • Now mix the remaining ingredients well.
  • Crazy corn ready to be served :) yummy!
