Semiya coconut milk payasam/kheer/pudding

Wishing all my dear friends a Prosperous and Healthy Tamil New Year.

 புத்தாண்டு உஙக‌ளுக்கு மகிழ்சியாக மலர வாழ்த்துக்கள்!

Celebrations are many in India and they are all associated with food sweets. Each festival holds an unique bond to a whole range of foods and sweets. Payasams/kheers are many and one of it has to be a part of every celebration.

Of all the payasams, Semiya payasam made out of milk is the easiest and tastiest to make.I just recently tried making it with coconut milk and i loved it.Being a south indian, coconut in all its forms has to be by far a favourite. But this is different, it was just a refreshing taste in the simple milk payasam.

You need

Semiya/vermicilli 1/2 cup
Milk 1 and half cup
Coconut milk 1 and half cup
Sugar 3 tablespoons or to taste
Water half a cup
Cashew nuts 1 tablespoon
Dry grapes/raisins 2 tablespoon
Cardamom pods crushed 3
Roasted coconut flakes/dessicated coconut 1 tablespoon
ghee 2 tablespoons

  • Add semiya in a thick bottom pan and roast it in a spoon of ghee until slightly brown or use roasted vermicilli. Remove the semiya to a plate. In this same pan fry cashews and raisins until brown keep aside.
  • Add milk to the pan let it heat add the sugar once its dissolved add the semiya and water.Ccook the semiya until soft.
  • Add crushed cardamom pods and fried nuts and raisins.
  • Toast the coconut in some ghee and add it to the milk mix.
  • Once the semiya has cooked check for sugar and add the coconut milk.Once the coconut milk has been added just stir once and turn off the heat.

Serve flavourful payasam hot or cold as you like.We love ours luke warm :)

Rice kheer/Pudding

Its the weekend lets celebrate :) isn't that reason enough to make a sweet dish.I didn't even wait for weekend i just made it one afternoon to beat the heat and it was super delicious and creamy. If you want to make an instant(almost) dessert this is what you should be thinking!

My DH even asked me how i've never made this before and that it was really nice. The simplicity of this dessert is what makes it so delectable. Its also fat-free except milk ofcourse.
I had some cooked basmati rice in hand and was wondering what to do with so little of it.So i remembered watching some cook on tv adding some to his phirni I didn't exactly know if that was appropriate i thought you added rice flour to phirnis anyway i thought i'll research on it later.

This kheer really surprised me because i wasn't expecting such a luscious dessert to be the outcome. If you're wondering why i'm stressing the point that its delicious so many times you have to try it first.

Preparation time:20 mins
Serves 2 generously

You need
Boiled milk 2 cups
Cooked basmati rice 1 cup
Sugar 4 5 tablespoons as per your sweet intake
Cardamom pods/elaichi 2 crushed
Saffron few strands /optional
Rice flour 1 tsp

  • Add cooked rice to the boiled milk and keep this on a low flame. Keep stirring it occasionally our aim is to nicely soften the rice so we get a creamy consistency. This should take about 10 12 minutes.
  • Add the crushed cardamom pods.
  • Try to mash the rice with a ladle and if you are to able to do it thats about enough.
  •  Add sugar and mix well cook well until all is mixed well.
  • Add strands of saffron its ok if you don't have it thats perfectly ok.
  • Sieve the rice flour into this mixture and cook for another 5 minutes.
  • Pour into desired dishes and cool for 2 hours.

Enjoy nicely chilled kheer on a hot afternoon or makes a creamy easy dessert.

Tips:
- Cook rice by whatever means you are comfortable with, i cooked it in the pressure cooker.Alternately cook the rice until soft and add the milk to it.
-Since i had pre cooked rice i added it to the rice, you can cook rice directly in milk that would be even more nice and creamy

What better way to celebrate something good or just an excuse to indulge in some sweet craving :)

This kheer/pudding is very easy to make.Payasam/kheer usually makes its presence in all indian banquets or meals as the dessert. This sago/javarisi payasam is so easy you can make it immediately. The only time it takes is to cook the sago beads.

Milk 1/2 cup
Water enough to cook the sago
Crushed cardamom 2 pods

Roast these in about 1 -2 tablespoons of ghee/clarified butter until brown

Cashew nuts 1 tablespoon roughly chopped (or almonds)

  •  Soak the sago beads in some water for 2 hours until they go translucent.Add enough water in a deep vessel and cook the sago until they go transparent.Keep checking for the water. This is will take some time about 10 minutes.
  • Once the sago cooks, add the milk and cook it some milk and add the cardamom pods.
  • Let it simmer for 5 minutes next add the condensed milk to adjust to your sweet tooth and throw in the ghee-roasted nuts and raisins.Turn off the flame.
