Strawberry Oats Smoothie/Shake

A friend recently requested me to post more baby friendly dishes as she finds it extremely hard to feed her child.Since I'm also on the same boat as her I did think i should post some easy healthy recipes but the same which kids can have and we feel relieved that we've done our parts well.You can do this with milk to make it a shake or with thick yogurt to make a lassi/smoothi choose your taste!

My elder one used to be an easy kid now i realise when i have comparison!My younger one is extremely choosy and picky and if i think of it the only proper meals he has is his lunch!Now every meal needs a lot of thought and effort to get him to eat it.



Lets see how i made this

You need

To make 2 glasses

Strawberries 4-5 or more if you like
Oats half cup
Water half cup
Milk 1 cup to make the shake or thick yogurt to make a lassie
Sugar to taste


  • Cook the oats in water until soft.
  • Once cool blend strawberries and sugar to smooth puree.Add the oats blend it again and then blend again after adding milk or yogurt.
  • Serve with small pieces of strawberry added to the smoothie or shake.



Healthy strawberry shake is ready enjoy it!

Fruit Verrines


I love desserts in a cup now even though i end up losing my cup most of the times but more than eating it i love to make it!I enjoy the colors and layers that show through the glasses.You can get as creative as you can with these.I intended to make a black forest pudding but this is what i ended up with.The result was great :)

Everyone seems to be enjoying these multi colored desserts more than the ones that are more humbler which makes me want to try more of such desserts :) Check out my others Tiramisu and Custard jelly in a cup.








 Preparation time :  20 minutes plus cooling time

To make this you need

Fruits - strawberry,mango
I used dried strawberries feel free to use fresh ones

Layer one
Chocolate cake 4-5 slices

Layer two
Mango cubes of one medium sized mango

Layer three
Strawberry flavoured yogurt few tablespoons

To top with Peanut candy 4-5 pieces


- Soak the dried strawberries in some water so the water will get a nice strawberry flavour.If using fresh berries cook them with sugar and water for a few minutes then strain the fruit and liquid.

To make flavoured yogurt,you need - Hung curd 4 tablespoons
Add 1 tsp of sugar add the cooked berries and blitz in a blender.Mix this to the hung curd to get flavoured yogurt.

- To assemble the verrines, add the chocolate cake to the bottom add a few tsps of the fruit flavoured liquid we had strained.
- Add mango cubes above this.
- Add the flavoured yogurt on top of this.
- Repeat these three layers to fill the glass to the top.
- Garnish the tops with peanut candy bits.



Notes :
- I used ready made chocolate cake and peanut candy.
- To make hung curd, use a thin cloth over a strainer and pour some curd onto the cloth, the whey will separate from the milk solids.Leave this for a few hours.Then beat the thick milk solids well with a whisk or fork to make it creamy.

Strawberry - dark chocolate chunk mug cake (eggfree)

I have been wanting to try a mug cake for ages now, the most popular one in the blogging world is a nutella mug cake- that's still on the to-bake list!But i tried something else...it was good enough :) And it is a microwave 2 min cake!


This cake is egg-free and i tried to make it vegan but had to make alterations and so it contains yogurt.I have used ground flaxseed as an egg substitute.That was a first time as well.When i came here to my mom's she told me how she started using flaxseeds in her daily porridges and its good.Since i had already seen many vegan recipes over the internet i was keen to use it.I had many inhibitions like would the flaxseed actually work like egg, will it make the cake smell weird.But these were all proven wrong.

For the mug cake you need 2 good quality mugs first of all :) we don't want explosions or accidents in the microwave....yes it is a microwave 2 minute cake.



You need

Wheat flour/All purpose flour 4 tablespoons
Sugar(powdered) 4 tablespoons
Whisked egg 2T/ flaxseed powder 1/2 tablespoon mixed in 1 tablespoon of water
Milk 3 tablespoon or more to make the batter loose
Oil 3 tablespoon
Dark chocolate chunks 3 tablespoon
Vanilla essence 1/2 tsp
Flavored yogurt 3 tablespoon
Candied strawberry 2 tablespoon
Baking soda 1/2 tsp

  • Grease the mugs you are going to use and keep aside.
  • Mix wheat flour, baking soda, sugar powder in a bowl.
  • Mix milk, oil,yogurt, flax seed + water mix, in another bowl with vanilla essence.
  • Mix both wet and dry ingredients to make a smooth mix.
  • Add strawberry chunks and chocolate chunks and mix into batter.
  • Divide the batter into 2 mugs.
  • Cook the cakes in the microwave oven for 2 minutes on high power.

  • Enjoy hot mug cake :)

Tips/:

- I used flaxseed powder just to see how it works and i didn;t find anything wrong with it.
- Since i used wheat flour i had to add extra yogurt to mix the flour in.
- i used passionfruit flavored yogurt but any flavor will work and you can skip the essence too.
- Microwave the cake for 2 mins first and then allow to cool it will set well even if its wet when you turn it off.

Strawberry Banana crunchy Muffins

Banana Cakes/muffins are so flavourful,I love them.My DH does'nt like them much, so i avoid making them.I had a few strawberries sitting in the freezer and wanted to use them up in a juice/shake for LM but since its been so cold lately I din;t want to take that risk.




 My first baking experience with berries wasn't too bad, though baking with bananas is my favourite!The taste of bananas was overpowering and i had only a few strawberries.But the muffins were really crunchy and good.A sweet something recipe just in time for Valentine's day!




More than having strawberries i have enjoyed taking pictures the colors look outstanding in the photographs!You can see a few earlier posts here and here.



I've been jinxed at baking, only blunders come out after baking not cakes :( so i was determined to get a good cupcake this time and they were mighty good!

This is how i made it...


You need

All purpose flour/maida 1 n half cups
Baking powder 1 tsp (not heaped)
Baking soda less than 1 tsp
Sugar 3/4th cup
Salt 1/2 tsp


Egg 1
Oil (vegetable oil) 1/3 cup(less than half)
Almond essence half tsp
Yogurt 2tsp
Banana 1 long one mashed(use a really ripe one)
Strawberries 10 (use more if u have) chopped into bite sized bits/puree them with some sugar

For the topping
Sugar white/brown 2 tablespoons
Almond shavings 2 tablespoons

  • Preheat the oven to 220C and line or grease the muffin tray.
  • Sieve and mix the dry ingredients in a bowl.Keep it aside.
  • In another bowl, beat the egg until frothy and then slowly add the oil to this.Add the essence and yogurt and beat until mixed well.
  • Pour the wet mix into the first bowl with dry ingredients.Pour it in parts and mixing in between.This recipe doesn't need excess mixing, just need to moisten the dry ingredients with the wet.
  • Spoon the mix into the greased/lined muffin pan and sprinkle sugar and almond shavings on each muffin.
  • Bake at 180C for half hour or until skewer comes out clean.
  • Cool them before having these crunchy yummy muffins.
These muffins store well in the refrigerator for 2 days or more but once they are cooled the tops don't remain crunchy as when hot.

Shake-d

I finally found some strawberries, LM has constantly been pestering us for strawberry juice we even went looking one day and never found them :) Since i found this box of strawberries i am treasuring them!





First thing that came to my mind very common of course strawberry milkshake.

And then i made some beautiful strawberry yogurt :) I'll be putting up the post soon!
