Strawberry Banana crunchy Muffins

Banana Cakes/muffins are so flavourful,I love them.My DH does'nt like them much, so i avoid making them.I had a few strawberries sitting in the freezer and wanted to use them up in a juice/shake for LM but since its been so cold lately I din;t want to take that risk.




 My first baking experience with berries wasn't too bad, though baking with bananas is my favourite!The taste of bananas was overpowering and i had only a few strawberries.But the muffins were really crunchy and good.A sweet something recipe just in time for Valentine's day!

I've been jinxed at baking, only blunders come out after baking not cakes :( so i was determined to get a good cupcake this time and they were mighty good!

This is how i made it...


You need

All purpose flour/maida 1 n half cups
Baking powder 1 tsp (not heaped)
Baking soda less than 1 tsp
Sugar 3/4th cup
Salt 1/2 tsp


Egg 1
Oil (vegetable oil) 1/3 cup(less than half)
Almond essence half tsp
Yogurt 2tsp
Banana 1 long one mashed(use a really ripe one)
Strawberries 10 (use more if u have) chopped into bite sized bits/puree them with some sugar

For the topping
Sugar white/brown 2 tablespoons
Almond shavings 2 tablespoons

  • Preheat the oven to 220C and line or grease the muffin tray.
  • Sieve and mix the dry ingredients in a bowl.Keep it aside.
  • In another bowl, beat the egg until frothy and then slowly add the oil to this.Add the essence and yogurt and beat until mixed well.
  • Pour the wet mix into the first bowl with dry ingredients.Pour it in parts and mixing in between.This recipe doesn't need excess mixing, just need to moisten the dry ingredients with the wet.
  • Spoon the mix into the greased/lined muffin pan and sprinkle sugar and almond shavings on each muffin.
  • Bake at 180C for half hour or until skewer comes out clean.
  • Cool them before having these crunchy yummy muffins.
These muffins store well in the refrigerator for 2 days or more but once they are cooled the tops don't remain crunchy as when hot.
