Pasta with cheese and lime chicken

Its been  while since we had pasta, so i made it for breakfast this weekend.Since i had some chicken in hand so this is what i whipped up and it was a wonderful breakfast a break refreshing break from our everyday southindian fares or breads.

 

 I usually make plain pasta for my lil one and she doesn;t like any spices except in her chicken.So since the pasta had chicken it was a great weekend treat for her and us all alike.My laptop charging wire is broken and so i had to sit on this desktop of ours and compose this and its taking forever!finally i'm glad atleast i can post something after a week.We all know how addictive blogging can be ;)

 You need

Pasta any shape cooked 1 large cup

To make the sauce
Onion puree 1 large onion
Tomato puree 2 medium tomatoes
Garlic pods minced 4 5
Capsicum  half a medium sized one chopped finely
Carrot 1 medium chopped finely
Garam masala 1 tsp
Pepper powder 1/2 tsp
Tomato sauce 1 tsp
Oil/Butter 2 tsp +2 tsp
Salt to taste
Cheese cubes 1

To prepare the chicken
Boneless chicken pieces chopped in to small pieces half a cup
Salt to taste
Red chilli powder 1/2 tsp
Lime juice of half a medium lime
Oil 1 tsp
Heat oil in a pan, add the chicken and fry until done.Keep aside.



  • In a pan heat 2 tsp oil, add the chopped vegetables and saute them well.Keep aside.
  • Heat oil in same pan, add oil, add the chopped garlic and saute well.
  • Now add the onion puree and fry well until the oil leaves the sides.
  • Add the tomato puree and tomato sauce and cook well until both are well combined.
  • Add the garam masala and pepper powder.
  • Add the cooked pasta and mix well.Check for salt.
  • Add water if you want it a little loose.
  • Mix in the sauteed vegetables and lime chicken.
  • Add chopped cheese cubes.

Baby Pizzas - perfect treat for the kiddies

My first MM after my vacation:) I always look forward to MM, getting to know what the magic ingredients are and thinking what to make is really a fun idea.I loved the fun ingredients this month - flour and coriander(leaves/seeds).I have been watching quite a few pizza making shows on tv recently that i definitely knew i was making some bread for the MM but when i looked at my LM i thought it has to be pizzas!A wonderful treat for the kiddies!


This is my first time at making pizzas from scratch which is why i thought making a mini-pizza would be a good idea.It was a hit with my family.Beautiful bite sized pizzas.The potatoes had a beautiful roasted flavour with the garlic cilantro drizzle adding a touch of intense flavors!


I used to think making pizzas was way too tedious and time consuming until i watched on tv, how easy traditional pizza making is.The Italians make pizzas like our chapatis on a daily basis with healthy toppings and not always is cheese included (surprised! me too)



This is such a quick and easy snack and as i just got back from my holidays the fridge is yet to be stocked completely.So i decided to go easy on the toppings: potatoes and garlic cilantro sauce.




You need
for the base:
All purpose flour/maida 2 and half cups
Yeast 1 tblspn
Sugar 1 tablespoon
Salt 1 tsp
Oil 2 tablespoons
Warm water about 1 cup

- Mix all the above ingredients and knead well to make a nice soft dough.When you poke the dough it should bounce back when you've reached that stage grease the dough ball and place it in a well greased bowl.
- Cover the bowl and allow the dough to double in size.This should take about a few hours

For the topping 
Tomato sauce 2-3 tablespoons
Boiled potato 1 medium sized sliced into discs


To drizzle : grind to a course paste

Chilli sauce 1 tsp
Garlic pods 2
Cilantro/coriander leaves a few sprigs
salt to taste
Oil 2 tablespoons


  • Once the dough is ready, make small balls out of them and roll them out with your hand not too thin and not too thick.place the spread pizza bases on a greased tray.
  • Spread a generous amount of tomato sauce, place a few potato discs and pour a few spoons of the cilantro garlic paste on top.
  • Sprinkle some oil around the sides of each pizza and let this rest for an hour.
  • Preheat the oven to 220C and push the greased tray with pizzas into the oven and bake for about 20 mins.Until the base is done.
  • Yummy baby pizzas are ready to enjoy with some cool lemonade!

Aloo Methi

I had posted this recipe earlier this month using kasuri methi(dried fenugreek leaves).This recipe uses the fresh fenugreek leaves.They are really healthy and the health benefits are mentioned in my earlier post.


This easy dish makes a healthy side dish except that sometimes cleaning the fresh leaves are a tedious job.If the fenugreek leaves are tender, there is a short cut- just chop off the roots and wash thoroughly and grind it coursely in a mixer.Else the leaves have to be plucked.If the fresh leaves are unavailable use the sun dried - kasuri methi which is readily available in packs.



To make this dish, you need

Potatoes/baby potatoes 2 peeled and diced (if using baby potatoes can be used whole)
Fenugreek leaves/methi leaves one bunch
Onion 1 medium chopped finely
Tomato 1 large
Salt to taste
Cumin seeds 1 tsp
Garlic 2 3 pods
Oil 2 tablespoons
Chilli powder 1 tsp (or as much as you need)
Turmeric/haldi powder 1/2 tsp


  • Heat oil in a pan, add the cumin seeds and let it splutter.Add the onions and fry till soft.Next add the garlic and fry well.
  • Add the methi leaves and fry well in the oil until the leaves go soft.Now add the potatoes and cover and cook for 5 minutes.
  • Next add the tomatoes and cover and cook.Do not pour extra water this needs to be a nice dry dish.
  • Add salt, chilli powder and turmeric powder and mix well.
  • Cover and cook until the potatoes are soft.

  • Serve hot with hot chapatis or steamed rice.
  • Stuff this in a slice of bread with your favorite spread and enjoy a healthy breakfast!!

Baby Potato Salad

I discovered baby potatoes are delicious recently.My DH used to always keep me away from them saying "they are so tiny, and they'll take ages to peel" and i used to run towards the normal potatoes.I couldn't resist the temptation for too long.LM loves these tiny potatoes roasted :) more reason to buy baby potatoes.


My DH tasted this and said "anything in yogurt tastes good!" .Which is why i decided to try it salad/raita in the first place!Trust me its good.



The creamy yogurt brings out the taste and spices used to toss the baby potatoes.


This is how i made it...

You need
Baby potatoes 15 nos
Yogurt/curd 1 cup
Oil 2 tsp
Cumin seeds 1 tsp(optional)
Turmeric powder/haldi 1/4 tsp(optional)
Red chilli powder 1 tsp(optional)
Chaat masala a generous sprinkling
Salt to taste



  • Pressure the baby potatoes for about 5 minutes and turn off the cooker.Once the pressure has cooled down, pop the potatoes in a pot of cold water and peel them.
  • Heat oil in a pan, sprinkle the cumin seeds once they crackle add the peeled potatoes (whole or chopped into quarters)
  • Add the spices - chilli powder,haldi and salt and toss the potatoes until they are soft.


  • In a serving bowl, mix the yogurt/curd with salt to taste(the potatoes have salt to so be careful) and chaat masala.
  • Mix the sauteed potatoes to this curd mix.
  • Sprinkle some chilli powder and chaat masala.



  • Serve spicy potato raita with parathas or indian breads :)
