Here I am after a long summer break.I hope all of you had good fun too.Its school time again and boy is it hot!!!Yesterday my LM came back looking like a tomato her cheeks were red because of the heat.It is very important to keep them hydrated and also nutritious food.Eggs are always high priority on the check list to good food.Not to forget they are super easy to cook and makes a delicious meal everytime.

Egg fried rice
I have some days when i feel like eating something simple out of a bowl and this simple egg fried rice is just perfect to sit on the couch in front of the tv and eat spoon after spoon of yummy good food.
These days I hardly get time to sit and compose a post in peace because i have to keep watching out if the baby will come running to pull the laptop.
Lets get to the recipe quickly then.
Preparation time : 30 minutes (cooking time + mixing time)
You need
Cooked rice 1 cup
Eggs 2
Garlic pods 3 chopped finely or grated
Vegetables chopped - 1 cup- carrots, cabbage, capsicum, beans (in any ratio you like)
Salt to taste
Pepper 1 tsp
Stock cube 1 (optional)
Oil 2-3 tablespoons
- Keep the rice ready.While mixing the vegetables and egg if the rice has been cooled down then the rice wouldn't stick or break.
- In a wide pan, wok, add oil, add the garlic and then the chopped vegetables else the garlic will burn.
- Add salt enough for the vegetables and allow to cook.
- Once they are cooked, add the stock cube let it break down.
- Add the cooked rice and add salt and pepper to taste.
- Push the rice to one side or move it onto another dish, adding a little oil break eggs into the pan and scramble it add salt and pepper to the eggs.
- Once the eggs are completely scrambled mix the rice and vegetables mix.Stir until well mixed.
- Enjoy hot egg fried rice with a cup of cold juice and a good movie on tv :)

Capsicum Scrambled eggs /Egg burji with capsicum
Eggs and bread are one incredible combination.On days when I am super lazy or just fancy having a good lunch I have bread and my favourite egg burji.Try adding a few slices of capsicum it just gives those eggs that incredible flavour I love.
I make this quick side dish for chapathis usually on mondays when I just can't drag myself off the bed.
Scrambled eggs aren't rocket science I know everyone makes them and everyone has their own favourite way to cook eggs.This one I like especially with bread and a tall glass of orange juice for lunch :) I have to be in bed but I'm thinking of egg burji on a toasted slice of bread now.
Preparation time - 15 minutes
Serves one generously
Eggs 1
Onion 1 medium chopped finely
Tomato 1 small chopped finely
Capsicum a small piece or large as you like chopped finely
Curry leaves 4-5
Cilantro few
Oil 1 tablespoon
Salt to taste
CHilli powder 1/2 tsp
Mustard seeds 1/2 tsp
- Heat oil in a pan, add mustard seeds,curryleaves, onions saute till transparent.
- Add tomato and cook until done.Next add the capsicum.
- Once the capsicum is tender add salt and chilli powder.
- Break the egg into the pan and stir vigorously until the egg is nice and dry.
- Turn off the heat once the egg is all done.
- Sprinkle chopped cilantro leaves.

Spicy Egg kurma
Eggs are always life savers.Apart from the fact that they are tasty in any form they are too versatile too.I love trying to make new dishes with eggs.This is one such gravy that turned out super good!
You need
Hard boiled eggs 2 cut into round slices
Onion 1 large sliced finely
Tomato 2 medium chopped
Curry leaves 2 sprigsMustard seeds 1/2 tsp
Fennel/saunf/sombu 1 tsp
Coconut oil 2 tablespoons
Ginger 1 inch piece
Garlic 5-6 pods
Dhaniya powder 1 tsp
Chilli powder 1/2 tsp or more
Green chilli 2nos
To grind to a fine paste
Whole spices - 2 cardamoms and an inch sized piece of cinnamon
Coconut 1 tablespoon
Cashew nuts 5 nos
- In a pan, heat coconut oil, add the fennel seeds and mustard seeds, green chillies once it pops add the curry leaves.
- Add the onions let it saute well until soft.
- Crush the ginger garlic roughly or in a mixer.
- Add tomatoes and let it saute well until you get a smooth gravy mix.
- Add dhaniya powder and chilli powders and cook until raw smell goes away.
- Add salt to taste and turmeric powder.
- Add the eggs.
- Add the ground paste and check for salt again.Spoon gravy over eggs and don't stir anymore.
- After it simmers for 5 minutes turn off the heat.
- Add some curry leaves to garnish.
Spicy egg kurma is ready to be served with any breads,rotis or parottas :)

Chettinad style Egg curry/kuzhambu
Its so difficult to wake up on weekends and to cook don't even ask.Thats when i thought of making this curry and my ghee rice with some ready made coconut milk powder.What a breeze of a lunch it was!
You need
Hard boiled eggs 3
Baby onions 10 nos
Tomato 1 small
Tamarind 1 small lime sized ball
Coriander/dhaniya powder 1 tsp
Chilli powder 1/2 tsp
Turmeric powder 1/4 tsp
Pepper corns 1/2 tsp
Cumin seeds 1/2 tsp
Ginger garlic paste 1 tsp
Green chilli 1 slit
Garam masala whole - cloves, cardamom, cinnamon 2 each
Salt to taste
To temper
Oil 1 tablespoon
Curry leaves 1 sprig
Mustard seeds 1 tsp
I saw this recipe at Jay's Tasty Appetite and i immediately wanted to try it out.The most difficult part in this meal would have been to squeeze some fresh coconut milk but since i used ready made powdered coconut milk it was simple.

- Heat pan add a little oil and roast the whole spices, pepper corns,cumin seeds and add the onions and fry well too.Once the onions are brown, add tomato and roast well.
- Turn off the heat and add the dhaniya powder and chilli powders.
- Let this cool and grind to a smooth paste.
- Heat oil in a pan, add the mustard seeds and curry leaves,Add ginger garlic paste and green chillies.
- Now add the ground onion masala paste and cook it well.
- Add the tamarind water and let the raw smells go away.
- Check for salt and add turmeric powder
- Add the hard boiled eggs.Pricking them with a fork will help some spices to get into the eggs.
- Serve hot with ghee rice or chapathis.

Masala Eggs
I just realised while making this dish that i haven;t a single egg recipe post on the blog yet!!!Surprising!Eggs come to my rescue when I haven't chopped any vegetables for lunch and I hate chopping first thing in the morning.They are really versatile and yea everyone knows how delicious and proteinous they are and ofcourse bakers know what magic eggs can create!!
My mil usually makes this recipe a quick toss to the hard boiled eggs.I feel eggs are already yummy why give them a make-over?I knew the answer to that when i made them last weekend :)

Preparation time : 5 mins+ eggs cooking time
Serves 2
You need
Hard boiled eggs 2 sliced in quarters
Oil 2 tsp
Mustard seeds 1 tsp
Curry leaves a few
Red chilli powder 1 tsp
Turmeric/haldi powder 1/4 tsp
Rice flour 2 tsp
Water 2 tablespoons
Lime juice few drops
- Peel and cut the eggs into wedges.Now add the masala powders - haldi, red chilli powder, and rice flour with salt and lemon juice - mix well.Add a little water if needed so the masala coats the eggs.
- Heat oil in a pan, add the mustard,curryleaves and let it pop.Add the eggs and a little water so the pan heat reduces a bit.
- Toss the eggs until the water is completely gone and the spices nicely coat the eggs.
- Serve hot as it is or with steamed rice and curry or any variety rices like here and here.
